In a frying pan heat Olive oil. Then add tomato, onion, cilantro and fry until lightly brown. Next add the shredded turkey, parsley and salt and pepper to taste. Not much frying is needed since the turkey is completely cooked, just fry until heated then turn off burner.
In a bowl mix together onion, tomatoes, cilantro and lemon juice. Salt and pepper to taste.
Place fried turkey and salsa on tortilla. Roll the tortilla and Enjoy. For added flavor use some Marie Sharp's pepper sauce.
