Ingredients:
The holiday is over and you don’t know what to do with all the leftover turkey? Well here is an easy, fun and tasty dish to put that leftover to good use.
1 lb corn tortilla ( factory or handmade is acceptable)
2 cups shredded leftover turkey
1 handful chopped cilantro
1 chopped tomato
1/2 cup diced onion
1 teaspoon parsley
1 table Extra Virgin Olive Oil
Salt and pepper to taste
Salsa
1 diced onion
2 chopped tomatoes
2 handful chopped cilantro
2 tablespoons lemon juice
salt and pepper to taste
Directions:
In a frying pan heat Olive oil. Then add tomato, onion, cilantro and fry until lightly brown. Next add the shredded turkey, parsley and salt and pepper to taste. Not much frying is needed since the turkey is completely cooked, just fry until heated then turn off burner.
In a bowl mix together onion, tomatoes, cilantro and lemon juice. Salt and pepper to taste.
Place fried turkey and salsa on tortilla. Roll the tortilla and Enjoy. For added flavor use some Marie Sharp’s pepper sauce.
