Egg Bruschetta

Ingredients:

1 mini French bread loaf (1/2 lb) cut into 16 slices
2 to 2 tablespoons olive oil
½ teaspoon seasoned salt
Cottage Cheese
Red pepper
¼ cup chopped fresh basil
4 hard-cooked eggs, each cut into 4 slices
Salt and pepper, optional
Additional basil, optional
Carrot sticks optional

Egg Bruschetta Recipe

Directions:

Preheat oven to 400ºF. Place bread slices on an ungreased baking sheet. In small bowl, stir together olive oil and seasoned salt. Brush evenly on bread slices. Bake for 5 to 7 minutes or until lightly toasted. Spread approximately 1 tablespoon cottage cheese evenly of each slice.  op each with 2 pieces red pepper. Sprinkle each with about ¾ teaspoon basil. Arrange one egg slice on each. Sprinkle with salt and pepper, if desired. Garnish with additional basil if desired. Serve with carrot sticks, if desired.
